Preparation Instructions (Commercial Format):

Machine Mixing:

1. Preheat oven to 425F (or 375F for convection).

2. Lightly oil an 18×26 pan (full batch) or 13×18 pan (half batch).

3. Add cool water to a 12-quart bowl, then add 5 lb mix.

4. Mix on low speed (#1) for 30 seconds. Scrape. Repeat another 30 seconds.

5. Pour into pan and bake for 2023 minutes (1719 min convection).

Hand Mixing:

1. Preheat oven and prepare pans as above.

2. Add mix to water in a large bowl. Whisk until smooth.

3. Pour into prepared pan and bake as directed above.
